finally what a girl dreams of...having women rant and rave over your dish to pass. A classic female tradition, the feeling of showing off to the ladies and the pure satification of pleasing others was a success this weekend with my new dish. A Summer Pepper Salad.
Also a feeling of satisfication of finally using the beautiful dishware from our wedding. I have used 3 wedding presents for the first time within the last 2 weeks...since the last 3 years!
Check it out...so simple too.
Summer Pepper Salad
Ingredients:
- 1 green bell pepper, seeded & chopped
- 1 orange bell pepper, seeded & chopped
- 1 yellow bell pepper, seeded & chopped
- 1 medium cucumber, sliced
- small bag, pea pods (trim tips)
- 8oz. crumbled feta cheese
- 1 tablespoon Newmans dressing-Olive Oil & Vinegar
- 1 pk fresh cut mushrooms
Directions:
In large bowl, mix all peppers, feta cheese, mushrooms, pea pods and dressing. Line bowl edge with sliced cucubmers. chill at least 30 minutes in the refridgerator before serving.
